Ingredients
- 1 cup freeze-dried strawberries
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- Pinch of salt
- 1 cup white chocolate chips or chopped white chocolate (melted)
- Optional: pink food coloring
- For coating: 1–1 1/2 cups melted white, milk, or dark chocolate
- Optional toppings: crushed freeze-dried strawberries, sprinkles, or drizzled chocolate
Instructions
- Pulse freeze-dried strawberries in a food processor until they become a fine powder.
- In a bowl, beat cream cheese, powdered sugar, vanilla, and salt until smooth.
- Melt the white chocolate and let it cool slightly, then stir into the cream cheese mixture.
- Mix in the strawberry powder and optional pink food coloring until well combined and evenly colored.
- Chill the mixture for 1 hour or until firm enough to scoop.
- Use a spoon or scoop to form small balls and place them on a parchment-lined tray. Freeze for 15–20 minutes.
- Dip chilled truffles into melted chocolate and place back on the tray to set.
- Decorate immediately with optional toppings and refrigerate until ready to serve.
Notes
- Use baking chocolate or melting wafers for a smoother coating.
- Do not substitute fresh strawberries—they add too much moisture.
- Store in the refrigerator or freezer for make-ahead convenience.
- For a quick version, roll truffles in powdered sugar or crushed berries instead of coating.
