Pumpkin spice protein loaf is a moist, warmly spiced bread made with wholesome ingredients and a protein boost. It’s perfect for a nutritious breakfast or snack that satisfies without the sugar crash.

Ingredients

  • 1 cup pumpkin puree (unsweetened)
  • 2 eggs
  • 1/2 cup protein powder (vanilla or unflavored)
  • 1 cup oat flour or almond flour
  • 1/4 cup maple syrup or honey
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/3 cup Greek yogurt or unsweetened applesauce
  • Optional: 1/4 cup chopped nuts, chocolate chips, or seeds

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
  2. In a large bowl, whisk together eggs, pumpkin puree, Greek yogurt (or applesauce), and maple syrup.
  3. Stir in protein powder, oat flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt until just combined.
  4. Fold in optional add-ins like nuts or chocolate chips if desired.
  5. Pour batter into prepared loaf pan and smooth the top.
  6. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  • Use almond flour for a grain-free variation.
  • Add flaxseed meal or collagen powder for extra protein.
  • Include raisins, pumpkin seeds, or walnuts for added texture.
