Strawberry Truffles are rich, creamy no-bake treats made with real freeze-dried strawberries and white chocolate, coated in melted chocolate for a beautiful and indulgent finish.

Ingredients

  • 1 cup freeze-dried strawberries
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup white chocolate chips or chopped white chocolate (melted)
  • Optional: pink food coloring
  • For coating: 1–1 1/2 cups melted white, milk, or dark chocolate
  • Optional toppings: crushed freeze-dried strawberries, sprinkles, or drizzled chocolate

Instructions

  1. Pulse freeze-dried strawberries in a food processor until they become a fine powder.
  2. In a bowl, beat cream cheese, powdered sugar, vanilla, and salt until smooth.
  3. Melt the white chocolate and let it cool slightly, then stir into the cream cheese mixture.
  4. Mix in the strawberry powder and optional pink food coloring until well combined and evenly colored.
  5. Chill the mixture for 1 hour or until firm enough to scoop.
  6. Use a spoon or scoop to form small balls and place them on a parchment-lined tray. Freeze for 15–20 minutes.
  7. Dip chilled truffles into melted chocolate and place back on the tray to set.
  8. Decorate immediately with optional toppings and refrigerate until ready to serve.

Notes

  • Use baking chocolate or melting wafers for a smoother coating.
  • Do not substitute fresh strawberries—they add too much moisture.
  • Store in the refrigerator or freezer for make-ahead convenience.
  • For a quick version, roll truffles in powdered sugar or crushed berries instead of coating.
