2-Ingredient Cottage Cheese Flatbread is a light, high-protein, and gluten-free recipe made with just cottage cheese and eggs. It bakes into soft, flexible flatbreads perfect for wraps, pizzas, or as a side dish.

Ingredients

  • 1 cup cottage cheese
  • 3 large eggs

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Blend cottage cheese and eggs in a blender or food processor until smooth.
  3. Pour batter onto prepared sheet and spread into 3–4 round or oval flatbread shapes.
  4. Bake for 20–25 minutes until set and lightly golden at edges.
  5. Cool slightly before peeling off parchment. Serve as wraps, pizza bases, or on their own.

Notes
