Ingredients
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger (optional)
- 1 cup pumpkin purée (not pie filling)
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 1/2 cup vegetable oil or melted coconut oil
- 1 teaspoon vanilla extract
- Optional add-ins: 1/2 cup chocolate chips, 1/2 cup chopped walnuts or pecans
- Optional toppings: rolled oats or pumpkin seeds
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease it well.
- In a large bowl, whisk together pumpkin purée, brown sugar, granulated sugar, eggs, oil, and vanilla extract until smooth.
- Add flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger. Stir until just combined.
- Fold in chocolate chips or nuts if using.
- Divide the batter evenly among 12 muffin cups, filling each about 3/4 full. Top with oats or pumpkin seeds if desired.
- Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Use homemade pumpkin purée if thick and well-drained.
- Reduce sugar by 1/4 cup for a less sweet version.
- Whole wheat flour or part oat flour can be used for a healthier twist.
- Make mini muffins by baking 12–14 minutes instead.
- Add a cinnamon sugar sprinkle or cream cheese swirl for variation.
