Ingredients
- 4 boneless, skinless chicken breasts or thighs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 2 tablespoons olive oil
- 2 tablespoons butter
- 8 oz mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Asiago cheese
- 1 tablespoon Dijon mustard
- 1 teaspoon whole grain mustard
- 1 tablespoon chopped fresh parsley
Instructions
- Season chicken with salt, black pepper, and dried thyme.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken on both sides until golden brown, about 4–5 minutes per side. Remove and set aside.
- In the same skillet, add butter and sauté mushrooms until golden and tender.
- Stir in minced garlic and cook until fragrant, about 30 seconds.
- Pour in chicken broth, scraping up browned bits from the bottom of the pan.
- Reduce heat to medium-low and stir in heavy cream, grated Asiago, Dijon mustard, and whole grain mustard.
- Simmer gently until sauce begins to thicken.
- Return chicken to the skillet and spoon sauce over the top.
- Cover and simmer for 8–10 minutes, until chicken reaches 165°F (74°C) and sauce is creamy.
- Garnish with fresh parsley before serving.
Notes
- Substitute Parmesan or Gruyère if Asiago is unavailable.
- Add spinach to the sauce for extra color and nutrition.
- Use half-and-half for a lighter version.
- Add a splash of white wine before the broth for deeper flavor.
- Store leftovers in the refrigerator for up to 4 days.
- Reheat gently with a splash of broth or cream to maintain sauce texture.
