This Apple Cinnamon Cottage Cheese Mug Cake is a warm, protein-rich treat made in minutes. It’s sweetened naturally, gluten-free, and full of cozy fall flavors like cinnamon, nutmeg, and diced apples. Perfect for a quick breakfast, snack, or dessert.

Ingredients

  • ¼ cup cottage cheese (blended smooth)
  • 1 egg
  • 2 tbsp oat flour (or almond flour)
  • 2 tbsp finely diced apple (peeled if preferred)
  • 1 tsp maple syrup or honey (optional)
  • ½ tsp cinnamon
  • ¼ tsp baking powder
  • Pinch of nutmeg
  • Pinch of salt

Optional Topping:

  • Dollop of Greek yogurt
  • Drizzle of maple syrup
  • Sprinkle of cinnamon

Instructions

  1. Blend cottage cheese until smooth using a small blender or food processor.
  2. In a microwave-safe mug or bowl, whisk the blended cottage cheese with the egg until combined.
  3. Add oat flour, diced apples, sweetener (if using), cinnamon, baking powder, nutmeg, and salt. Stir until well mixed.
  4. Microwave on high for 1½ to 2 minutes, or until set in the center.
  5. Let cool for 1–2 minutes before topping with Greek yogurt, maple syrup, and cinnamon, if desired.

  • No microwave? Bake at 350°F (175°C) for 15–18 minutes in a ramekin.
