Ingredients

  • For the Burritos:
  • 1 batch Slow Cooker Mexican Chicken (or shredded rotisserie chicken)
  • 6 burrito-sized tortillas (preferably uncooked/raw)
  • 1 cup shredded sharp cheddar cheese
  • Olive oil or nonstick spray
  • For the Cheesy Green Chili Sour Cream Sauce:
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 3 tbsp flour
  • 2 cups warm low-sodium chicken broth
  • ½ tsp cumin
  • ¼½ tsp salt
  • ¼ tsp black pepper
  • ½ cup sour cream
  • 2 oz mild chopped green chilies
  • ½ cup shredded sharp cheddar cheese
  • Hot sauce to taste (optional)
  • Optional Toppings:
  • Diced tomatoes
  • Sliced avocado or guacamole
  • Fresh cilantro
  • Salsa
  • Tortilla strips or crushed tortilla chips

Instructions

  1. Prepare Slow Cooker Mexican Chicken or shred pre-cooked chicken. Drain extra liquid.
  2. Preheat oven to 400°F. On each tortilla, place ½ cup chicken and cheese. Roll tightly and place seam-side down on a foil-lined baking sheet with a rack. Lightly brush or spray with olive oil.
  3. Bake for 18–20 minutes until golden and crisp. Broil for 2–3 minutes for extra crunch if desired.
  4. In a saucepan, melt olive oil and butter. Whisk in flour to form roux. Gradually whisk in broth. Add cumin, salt, pepper; simmer 5–7 minutes until thickened. Remove from heat and stir in sour cream, chilies, cheese, and optional hot sauce.
  5. Spoon sauce over baked burritos and top with desired garnishes.
