Baked Feta Bites are crispy, creamy, and savory little appetizers made with feta cheese wrapped in phyllo or coated in breadcrumbs, then baked until golden and melty. Topped with a drizzle of honey and herbs, they’re perfect for entertaining or snacking.

Ingredients

  • 1 block feta cheese, cut into 1-inch cubes
  • 68 sheets phyllo dough or 1 sheet puff pastry (alternatively, 1 cup breadcrumbs)
  • 2 tablespoons olive oil or melted butter
  • 1 egg (for egg wash or coating)
  • 2 tablespoons honey or hot honey (for drizzling)
  • Fresh thyme or oregano (optional, for garnish)
  • Black pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. If using phyllo: Layer 2–3 sheets, brushing each with olive oil. Cut into squares and wrap each around a feta cube like a parcel.
  3. If using breadcrumbs: Dip each feta cube into beaten egg, then coat with breadcrumbs, pressing gently to adhere.
  4. Arrange bites on the prepared baking sheet. Brush with olive oil or a bit of egg wash.
  5. Bake for 15–18 minutes until golden brown and feta is soft inside.
  6. Let cool slightly. Drizzle with honey or hot honey and sprinkle with herbs and black pepper. Serve warm.

Notes

  • Use goat cheese instead of feta for a milder bite.
  • Drizzle with balsamic glaze for a tangy twist.
  • Top with crushed pistachios or walnuts for added crunch.
  • Stuff with jam or herbs for a hidden flavor surprise.
  • Store leftovers in the fridge and reheat in oven to restore crispiness.
