Baked Feta & Tomato Chicken is a simple Mediterranean-inspired dish where juicy chicken roasts with sweet blistered tomatoes and creamy feta, creating a rich and savory pan sauce.

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1 1/2 cups cherry tomatoes
  • 4 oz block feta cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon lemon juice
  • Optional garnish: fresh basil or parsley

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish.
  2. Place chicken in the dish and drizzle with olive oil.
  3. Season chicken with salt, black pepper, oregano, and thyme.
  4. Scatter cherry tomatoes around the chicken and sprinkle minced garlic over the top.
  5. Place the block of feta in the center and drizzle lightly with olive oil.
  6. Bake for 25–30 minutes, until chicken reaches an internal temperature of 165°F (74°C) and tomatoes have softened and burst.
  7. Remove from oven and gently stir the feta and tomatoes to create a creamy sauce.
  8. Drizzle with lemon juice and garnish before serving.

  • Add zucchini or red onion for extra vegetables.
  • Sprinkle red pepper flakes for a subtle kick.
  • Chicken thighs provide a richer flavor and stay extra juicy.
  • Serve over pasta, rice, or crusty bread to soak up the sauce.
