Baked parmesan zucchini is a quick and easy side dish made with fresh zucchini rounds topped with a savory mix of parmesan, garlic, and herbs. It’s golden, cheesy, and a perfect low-carb veggie option.

Ingredients

  • 2 medium zucchini, sliced into 1/4-inch rounds
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange zucchini rounds in a single layer on the prepared baking sheet.
  3. Brush or drizzle each slice lightly with olive oil.
  4. In a small bowl, mix parmesan, garlic powder, Italian seasoning, salt, and pepper.
  5. Sprinkle the cheese mixture evenly over the zucchini slices.
  6. Bake for 12–15 minutes, until zucchini is tender and cheese is melted and golden.
  7. Optional: Broil for 1–2 minutes for extra browning. Serve warm.

Notes

  • Add red pepper flakes for a spicy kick.
  • Mix in panko breadcrumbs with the parmesan for a crispier texture.
  • Top with fresh herbs like parsley or basil after baking.
  • Try with yellow squash or eggplant for variety.
  • Use an air fryer for even quicker cooking (8–10 minutes at 400°F).
