Ingredients

  • Zucchini, sliced
  • 23 garlic cloves, minced
  • 12 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs (or panko for extra crunch)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a medium baking dish with olive oil.
  2. Toss sliced zucchini with garlic, olive oil, salt, and pepper in a large bowl until evenly coated.
  3. Spread seasoned zucchini into the greased baking dish, slightly overlapping the slices.
  4. Sprinkle with cheddar and Parmesan. Top with breadcrumbs for crispiness.
  5. Bake uncovered for 25–30 minutes, until cheese is bubbling, breadcrumbs are golden, and zucchini is tender.
  6. Let rest for 5 minutes before serving. Serve warm.
