This Banana Baked Oatmeal is a cozy, naturally sweet breakfast made with ripe bananas, rolled oats, and warm spices. It’s perfect for meal prep and can be served warm or cold for a nourishing start to your day.

Ingredients

  • 3 ripe bananas, mashed
  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 2 eggs
  • 1 1/2 cups milk (dairy or non-dairy)
  • 2 tbsp maple syrup or honey (optional)
  • 1 tsp vanilla extract
  • 2 tbsp melted coconut oil or butter
  • Optional add-ins: 1/2 cup chopped walnuts, chocolate chips, blueberries, or flaxseeds

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish.
  2. In a large bowl, mash the bananas until smooth.
  3. Stir in the eggs, milk, maple syrup, vanilla, and melted coconut oil.
  4. Add the oats, baking powder, cinnamon, and salt; stir until well combined.
  5. Fold in any optional add-ins.
  6. Pour the mixture into the baking dish and spread evenly.
  7. Bake for 35–40 minutes, until the top is golden and center is set.
  8. Cool slightly before slicing and serving warm, or refrigerate once cooled.

Notes

  • Use flax eggs for an egg-free version (1 tbsp ground flax + 3 tbsp water per egg).
  • Swap peanut butter or pumpkin purée for a flavor twist.
  • Add cocoa powder for a chocolate version.
  • Store in fridge for up to 5 days or freeze for longer storage.
  • Reheat in microwave or oven before serving.
