Ingredients

  • Boneless, skinless chicken breasts or thighs
  • Sweet potatoes, peeled and diced
  • BBQ sauce (store-bought or homemade)
  • Olive oil
  • Salt
  • Pepper
  • Paprika
  • Garlic powder
  • Optional Toppings:
  • Avocado
  • Corn
  • Black beans
  • Diced red onion
  • Fresh cilantro
  • Shredded cheese
  • Green onions

Instructions

  1. Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, salt, pepper, paprika, and garlic powder. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway.
  2. Season chicken with salt and pepper. Cook in a skillet over medium heat for 6–7 minutes per side, or until the internal temperature reaches 165°F. Let rest, then slice or shred and toss with warm BBQ sauce.
  3. Divide roasted sweet potatoes into bowls, top with BBQ chicken and desired toppings. Drizzle with extra BBQ sauce if desired.
  4. For meal prep, store chicken, sweet potatoes, and toppings separately in airtight containers.
