Berry French Toast Casserole is a warm, comforting baked breakfast made with custard-soaked bread and juicy berries. Perfect for make-ahead brunches, it’s golden on top, soft in the center, and bursting with flavor in every bite.

Ingredients

  • 1 loaf brioche, challah, or French bread (cut into cubes)
  • 6 large eggs
  • 1 1/2 cups milk or half-and-half
  • 1/2 cup heavy cream (optional, for richness)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/3 cup granulated or brown sugar
  • 2 cups mixed berries (fresh or frozen)
  • 1 tbsp butter (for greasing dish)
  • Optional: powdered sugar, maple syrup, or whipped cream for serving

Instructions

  1. Grease a large baking dish with butter.
  2. Layer half the bread cubes into the dish, then scatter half the berries on top. Repeat with remaining bread and berries.
  3. In a large bowl, whisk together eggs, milk, cream (if using), vanilla, cinnamon, and sugar.
  4. Pour the custard mixture evenly over the bread and berries, pressing down lightly to help absorb.
  5. Cover and refrigerate for at least 30 minutes or overnight.
  6. Preheat oven to 350°F (175°C). Uncover casserole and bake for 40–45 minutes, until golden and set in the center.
  7. Let rest for 5–10 minutes. Serve with powdered sugar, syrup, or whipped cream as desired.

Notes

  • Add cream cheese chunks between bread layers for a richer twist.
  • Use cinnamon swirl or raisin bread for extra flavor.
  • Add lemon zest to brighten the dish.
  • Reduce sugar if serving with syrup to balance sweetness.
  • Can be assembled the night before for easy baking in the morning.
