Light and elegant meringue nests with a crisp exterior and marshmallow-soft center, filled with sweet whipped cream and topped with fresh mixed berries.

Ingredients

  • For the meringue:
  • 4 large egg whites, room temperature
  • 1 cup granulated sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon white vinegar
  • 1/2 teaspoon vanilla extract
  • For the topping:
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. In a clean bowl, beat egg whites until soft peaks form.
  3. Gradually add sugar, one spoonful at a time, beating until glossy stiff peaks form.
  4. Gently fold in cornstarch, vinegar, and vanilla extract.
  5. Spoon meringue onto baking sheet and shape into small nests with an indentation in the center.
  6. Bake for 60–70 minutes.
  7. Turn off oven and let meringues cool completely inside with the door slightly ajar.
  8. Whip heavy cream with powdered sugar and vanilla until soft peaks form.
  9. Fill cooled nests with whipped cream and top with fresh berries before serving.

  • Ensure the mixing bowl is completely clean and grease-free for best meringue results.
  • Cool meringues slowly to prevent cracking.
  • Assemble just before serving to maintain crisp texture.
  • Store plain nests in an airtight container at room temperature for up to 2 days.
  • Drizzle melted chocolate or add citrus zest for flavor variations.
