These lemon brownies are dense, soft, and bursting with bright citrus flavor. With a fudgy texture similar to classic brownies and topped with a tangy lemon glaze, they offer the perfect balance of sweetness and refreshing zest.

Ingredients

  • For the brownies:
  • 1 cup unsalted butter, melted
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 2 tablespoons lemon zest
  • 1/4 cup fresh lemon juice
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • For the glaze:
  • 1 cup powdered sugar
  • 23 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, whisk together melted butter and granulated sugar until smooth.
  3. Add eggs, lemon zest, and lemon juice, mixing until fully combined.
  4. Stir in flour and salt just until incorporated, being careful not to overmix.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 20–25 minutes, until the center is set and a toothpick inserted comes out with a few moist crumbs.
  7. Allow the brownies to cool completely in the pan.
  8. Whisk together powdered sugar, lemon juice, and lemon zest until smooth and pourable.
  9. Spread the glaze evenly over cooled brownies and let it set before slicing.

  • Add white chocolate chips for a sweeter variation.
  • Increase lemon zest for a stronger citrus flavor.

  • Freeze cooled brownies in an airtight container for up to 2 months.
  • Double the recipe and bake in a 9×13-inch pan, adding a few extra minutes if needed.
