These big soft ginger cookies are thick, chewy, and warmly spiced with ginger, cinnamon, and cloves. With a hint of molasses and a sugar-crusted exterior, they’re a cozy treat perfect for the holidays or any time you need a comforting cookie.

Ingredients

  • 3/4 cup sugar (plus extra for rolling)
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup butter or margarine, softened
  • 1 egg
  • 1/4 cup molasses
  • 1 tablespoon water

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, sift together flour, ginger, cinnamon, cloves, baking soda, and salt.
  3. In a separate bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the egg, then stir in the water and molasses until fully blended.
  5. Gradually mix in the dry ingredients to form a dough.
  6. Roll dough into balls, then roll each ball in sugar to coat.
  7. Place dough balls on an ungreased baking sheet and gently flatten each one slightly.
  8. Bake for 10 minutes or until the edges are set and centers are soft.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
