Blueberry Delight is a no-bake layered dessert with a buttery graham cracker crust, creamy whipped filling, and a vibrant blueberry topping. A refreshing and easy treat perfect for summer gatherings.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/3 cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 (8 oz) container whipped topping, thawed
  • 4 cups fresh blueberries
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 cup water
  • 1 tablespoon lemon juice

Instructions

  1. Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press the mixture into a 9×13-inch dish to form the crust. Chill in the refrigerator while preparing the filling.
  2. In a large bowl, beat the cream cheese until fluffy. Add powdered sugar and vanilla extract and mix well.
  3. Fold the whipped topping into the cream cheese mixture until smooth. Spread evenly over the chilled crust.
  4. In a saucepan over medium heat, combine blueberries, sugar, cornstarch, water, and lemon juice. Cook until the mixture thickens and the berries burst.
  5. Pour the warm blueberry topping over the cream cheese layer and spread evenly.
  6. Refrigerate for at least 4 hours before serving to set the layers.
