A refreshing, non-alcoholic beverage combining sweet blueberries, warm ginger, and fresh thyme, topped with sparkling water for a lively, elegant mocktail.

Ingredients

  • 1 cup fresh or frozen blueberries
  • 34 fresh thyme sprigs
  • 12 inches fresh ginger, sliced or grated
  • 23 tbsp honey or simple syrup (to taste)
  • 1 tbsp fresh lemon juice
  • 12 cups sparkling water or club soda
  • Ice
  • Optional: extra blueberries, lemon slices, and thyme sprigs for garnish

Instructions

  1. In a small saucepan, combine blueberries, ginger, thyme, a splash of water, and honey. Simmer over medium heat for 10–15 minutes until the berries burst and flavors meld.
  2. Strain the mixture through a fine mesh sieve into a bowl or jar, pressing the berries to extract all the flavor. Let the syrup cool completely.
  3. Fill a glass with ice and add 2–3 tablespoons of the cooled syrup.
  4. Add fresh lemon juice and top with sparkling water.
  5. Stir gently and garnish with thyme sprigs, extra blueberries, or a lemon twist.

Notes

  • Swap blueberries for blackberries or strawberries for different berry flavors.
  • Add cucumber slices or fresh mint for a refreshing twist.
  • Use a mix of lemon and lime juice for extra brightness.
  • Maple syrup or agave nectar can replace honey for a naturally sweet version.
  • The syrup can be prepared ahead and stored in the fridge for up to 5 days.
