Cool, creamy Blueberry Swirl Yogurt Bites made with Greek yogurt and a lightly sweet blueberry swirl, perfect for a refreshing freezer snack or simple dessert.

Ingredients

  • 1.5 cups plain or vanilla Greek yogurt
  • 1 cup fresh or frozen blueberries
  • 2 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • 0.5 tsp vanilla extract

Instructions

  1. Add blueberries, honey or maple syrup, and lemon juice to a small saucepan.
  2. Cook over medium-low heat for 8–10 minutes, stirring occasionally, until blueberries break down and form a thick sauce.
  3. Remove from heat and allow the blueberry sauce to cool completely.
  4. In a bowl, stir together the Greek yogurt and vanilla extract until smooth.
  5. Spoon yogurt into silicone molds or mini muffin liners.
  6. Add small spoonfuls of cooled blueberry sauce on top and swirl gently with a toothpick or spoon.
  7. Place molds in the freezer and freeze for at least 2 hours, until firm.
  8. Remove bites from molds and store in a freezer-safe container.

Notes

  • Greek yogurt freezes best and gives a creamier texture.
  • Let bites sit at room temperature for 1–2 minutes before eating.
  • Granola can be mixed in for added crunch.
  • Other berries can be used for the swirl.
