Brie and Blackberry Puff Pastry Swirls with Honey & Rosemary are a stunning, sweet-savory treat featuring flaky pastry, creamy brie, juicy blackberries, and fragrant rosemary. Finished with a drizzle of honey, they make a perfect appetizer, brunch snack, or elegant party bite.

Ingredients

  • 1 sheet puff pastry (thawed if frozen)
  • 4 oz brie cheese, thinly sliced (rind on or off)
  • 1/2 cup fresh blackberries (halved if large)
  • 2 tablespoons honey (plus more for drizzling)
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 egg (for egg wash)
  • Optional: pinch of sea salt or crushed walnuts for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. On a lightly floured surface, gently roll out puff pastry to smooth seams and slightly thin it.
  3. Layer brie slices evenly over the pastry, leaving a small border on all sides.
  4. Dot blackberries over the brie, drizzle lightly with honey, and sprinkle with chopped rosemary.
  5. Roll pastry tightly into a log (jelly roll style), then slice into ¾–1 inch rounds.
  6. Place swirls on prepared baking sheet. Brush tops with beaten egg.
  7. Bake for 18–22 minutes, or until golden and puffed.
  8. Drizzle with additional honey and sprinkle with extra rosemary or sea salt, if desired. Serve warm or at room temperature.
