Bruschetta Chicken is a flavorful, low-carb twist on the classic Italian appetizer, combining juicy grilled or baked chicken breasts with a vibrant topping of tomatoes, garlic, basil, and balsamic vinegar. It’s fresh, healthy, and perfect for any occasion.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil (divided)
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 tsp Italian seasoning
  • 2 cups fresh tomatoes (Roma or cherry), chopped
  • 1/4 cup fresh basil, chopped
  • 1 tbsp balsamic vinegar
  • 1/2 cup shredded mozzarella or Parmesan (optional)
  • Balsamic glaze (optional, for drizzling)

Instructions

  1. Season chicken with salt, pepper, minced garlic, and Italian seasoning.
  2. Heat 1 tbsp olive oil in a skillet over medium heat. Cook chicken 5–7 minutes per side until golden and cooked through. Let rest.
  3. In a bowl, combine chopped tomatoes, garlic, basil, 1 tbsp olive oil, balsamic vinegar, salt, and pepper. Let sit for flavors to meld.
  4. If using cheese, add to chicken in last minutes of cooking and cover to melt.
  5. Spoon tomato mixture over warm chicken and drizzle with balsamic glaze if desired.
  6. Serve immediately with your favorite sides.
