Ingredients

  • 2 cups cooked chicken breast or thighs, shredded or chopped
  • 1/3 cup buffalo sauce (store-bought or homemade)
  • 2 cups cooked white rice, brown rice, or cauliflower rice
  • 2 cups lettuce or spinach
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced cucumbers
  • 1/2 cup shredded carrots
  • 1 avocado, sliced or diced
  • 1/4 cup ranch or blue cheese dressing
  • 1/4 cup crumbled blue cheese or shredded cheddar (optional)
  • 2 tablespoons chopped green onions (for garnish)

Instructions

  1. If chicken is not already cooked, season with salt and pepper and cook in a skillet over medium heat until done. Shred or chop.
  2. Toss the cooked chicken with buffalo sauce until well coated.
  3. Prepare bowl base: divide rice, cauliflower rice, or lettuce among four bowls.
  4. Top each bowl with buffalo chicken, cherry tomatoes, cucumbers, carrots, and avocado.
  5. Drizzle with ranch or blue cheese dressing and sprinkle with green onions and cheese if using.
  6. Serve warm or cold, depending on preference.
