This Burrata & Basil Bruschetta with Juicy Tomatoes is a fresh and elegant appetizer made with creamy burrata cheese, ripe tomatoes, and fragrant basil on toasted bread. It’s simple to prepare, bursting with summer flavor, and perfect for entertaining or a light snack.

Ingredients

  • 1 ball fresh burrata cheese
  • 1 cup ripe cherry or heirloom tomatoes, diced or halved
  • 2 tbsp fresh basil leaves, chopped
  • 1 small baguette or rustic bread, sliced into 68 pieces
  • 2 tbsp olive oil (plus more for drizzling)
  • 1 garlic clove, peeled
  • Salt and pepper to taste
  • Optional: balsamic glaze for drizzling

Instructions

  1. Preheat oven or grill to 400°F (200°C). Slice the bread and brush lightly with olive oil.
  2. Toast the bread in the oven or grill until golden and crisp, about 5–10 minutes.
  3. While the bread toasts, mix tomatoes with 1 tbsp olive oil, chopped basil, salt, and pepper in a bowl. Let sit to marinate.
  4. Once toasted, rub each piece of bread with the peeled garlic clove for extra flavor.
  5. Gently tear the burrata and place a portion on each toast slice.
  6. Spoon the marinated tomato mixture over the burrata.
  7. Drizzle with additional olive oil and balsamic glaze if using.
  8. Garnish with more basil and a sprinkle of flaky salt. Serve immediately.

  • Use pesto instead of basil for a richer twist.
  • Add  roasted red peppers for extra savory flavor.
  • For a spicy kick, sprinkle with crushed red pepper flakes.
  • Prepare tomato topping in advance but assemble bruschetta just before serving to keep the bread crisp.
  • Store leftover tomato mixture separately in the fridge for up to 2 days.
