Burrata Bruschetta is a quick, elegant appetizer that pairs creamy burrata with garlicky cherry tomato topping and crisp toasted bread. Finished with balsamic glaze, it’s fresh, flavorful, and ready in just 15 minutes.

Ingredients

  • 1 loaf crusty bread (baguette or ciabatta), sliced
  • 2 tbsp olive oil (for brushing)
  • 2 cups cherry tomatoes, halved or quartered
  • 1 garlic clove, minced
  • Salt and black pepper, to taste
  • 1 tbsp fresh basil, chopped
  • 12 balls burrata cheese
  • Balsamic glaze, for drizzling
  • Extra fresh basil, for garnish (optional)

Instructions

  1. Toast the bread: Preheat oven to 400°F (200°C). Brush both sides of the sliced bread with olive oil. Toast for 5–7 minutes until golden and crisp.
  2. Prepare tomato topping: In a bowl, mix cherry tomatoes, garlic, basil, salt, and pepper. Let sit for 5 minutes to blend flavors.
  3. Assemble: Top each toast with a spoonful of tomato mix. Tear open the burrata and spoon the creamy center on top.
  4. Finish: Drizzle with balsamic glaze and garnish with extra basil. Serve immediately while warm.

  • Use grilled bread for smoky flavor.
  • Substitute heirloom tomatoes or add red pepper flakes for variation.
  • No balsamic glaze? Reduce regular balsamic vinegar until syrupy.
