Caramel Apple Dessert Cups are layered treats with a buttery vanilla wafer crust, cinnamon-spiced apples, and creamy caramel mousse. Individually portioned and make-ahead friendly, they’re perfect for fall gatherings or elegant desserts.

Ingredients

  • 3 cups apples, peeled and diced
  • 1/3 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon butter
  • 1 1/2 cups vanilla wafer crumbs
  • 5 tablespoons melted butter
  • 2 tablespoons sugar
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 1/2 cups cold milk
  • 1/2 cup caramel sauce (plus more for drizzling)
  • 1 1/2 cups whipped topping

Instructions

  1. Cook diced apples with butter, brown sugar, and cinnamon in a skillet over medium heat until tender (5–7 minutes). Let cool.
  2. Mix vanilla wafer crumbs, melted butter, and sugar. Spoon about 2 tablespoons into each serving cup, pressing lightly to form a crust.
  3. Whisk pudding mix and cold milk until thickened. Stir in caramel sauce, then fold in whipped topping until smooth.
  4. Assemble cups by layering crust, apples, and caramel mousse. Repeat layers if desired.
  5. Top with extra apples, a caramel drizzle, and crushed cookies.
  6. Chill at least 1 hour before serving.

Notes

  • Add nutmeg or cloves to apples for extra spice.
  • Use graham cracker crumbs instead of vanilla wafers if preferred.
  • Swap whipped topping for fresh whipped cream for a richer mousse.
  • Add chopped pecans or walnuts for crunch.
  • Best served chilled; add final caramel drizzle just before serving.
