Chewy and crunchy dessert bars made with buttery caramel-coated popcorn, pressed into sliceable squares perfect for sharing and snacking.

Ingredients

  • 10 cups popped popcorn (about 1/2 cup unpopped kernels)
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1/4 cup light corn syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup chopped nuts or 1/2 cup mini chocolate chips

Instructions

  1. Line a 9×13-inch baking pan with parchment paper and lightly grease it.
  2. Place popped popcorn in a large mixing bowl, removing any unpopped kernels.
  3. In a saucepan over medium heat, melt the butter.
  4. Stir in brown sugar, corn syrup, and salt. Bring to a gentle boil.
  5. Boil for 4–5 minutes without stirring until the caramel thickens.
  6. Remove from heat and quickly stir in baking soda and vanilla extract until light and foamy.
  7. Immediately pour caramel over popcorn and toss to coat evenly.
  8. Transfer mixture to the prepared pan and press firmly into an even layer.
  9. Allow to cool completely before slicing into bars. If using chocolate chips, sprinkle over slightly warm bars and press gently.
