Caramelized Overnight Crème Brûlée French Toast is a luxurious, make-ahead breakfast casserole made with thick slices of brioche or challah soaked in a rich custard and baked over a buttery brown sugar caramel base. It’s crisp on top, silky in the center, and perfect for special brunches.

Ingredients

  • 1 loaf brioche or challah bread, sliced thick
  • 1 cup heavy cream
  • 1 cup whole milk
  • 5 large eggs
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon salt
  • 3/4 cup light brown sugar (for custard)
  • 1/2 cup unsalted butter
  • 3/4 cup light brown sugar (for caramel base)

Instructions

  1. In a saucepan, melt butter and 3/4 cup brown sugar over medium heat until smooth and bubbly. Pour into a greased 9×13-inch baking dish.
  2. Layer thick slices of brioche or challah over the caramel, slightly overlapping.
  3. In a bowl, whisk together eggs, heavy cream, milk, vanilla, salt, and remaining 3/4 cup brown sugar. Pour evenly over bread, ensuring all slices are soaked.
  4. Cover and refrigerate overnight or for at least 8 hours.
  5. Preheat oven to 350°F. Uncover and bake for 40–45 minutes, until golden and set.
  6. Let sit for a few minutes before serving. Optionally flip slices to show caramelized bottoms or dust with powdered sugar.

Notes

  • Use slightly stale bread for best texture.
  • Add orange zest or liqueur for citrusy flavor.
  • Top with berries and whipped cream for a decadent finish.
  • Reheat in the oven to maintain crisp edges.
