Soft, moist carrot cake bars packed with warm spices and topped with a creamy cream cheese frosting, delivering classic carrot cake flavor in an easy, sliceable form.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 3/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups finely grated carrots
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk the eggs with granulated sugar and brown sugar until smooth.
  4. Stir in the vegetable oil and vanilla extract.
  5. Fold in the grated carrots, then add the dry ingredients and mix just until combined.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 25–30 minutes, until a toothpick inserted in the center comes out clean.
  8. Allow the bars to cool completely.
  9. For the frosting, beat the cream cheese and butter until smooth, then mix in powdered sugar and vanilla.
  10. Spread the frosting evenly over the cooled bars and slice before serving.
