These cheese-stuffed meatballs are savory, juicy, and filled with melty mozzarella, baked to perfection and served over warm marinara sauce. Perfect for weeknight dinners or meal prep.

Ingredients

  • 1 pound lean ground beef (93%-7% fat)
  • ½ pound ground mild Italian sausage
  • 1 egg
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1214 small mozzarella cubes or pearls
  • 2 cups marinara sauce (for serving)
  • Chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground beef, Italian sausage, egg, breadcrumbs, Parmesan, Italian seasoning, garlic powder, onion powder, salt, and pepper. Mix until just combined without overworking the meat.
  3. Divide the mixture into 12 to 14 equal portions. Flatten each, place a mozzarella cube in the center, and form the meat around the cheese to seal.
  4. Place the stuffed meatballs on the prepared baking sheet and bake for 18–20 minutes, until cooked through and lightly browned.
  5. Meanwhile, warm the marinara sauce in a saucepan over the stove.
  6. Serve the meatballs hot over the marinara sauce, garnished with fresh parsley if desired.

Notes

  • Freeze mozzarella cubes for 10 minutes to help prevent cheese from leaking.
  • Substitute with other cheeses like cheddar, provolone, or pepper jack for variety.
  • For a low-carb version, use almond flour instead of breadcrumbs.
  • To cook in sauce, sear meatballs first, then simmer in sauce for 20–25 minutes.
  • Stores in the fridge up to 4 days, or freeze for up to 3 months.
