This Cheeseburger Pie inspired by Pioneer Woman is a cozy, weeknight classic made with seasoned beef, gooey cheese, and a fluffy Bisquick-style topping. It’s quick, satisfying, and packed with all the flavors of a juicy cheeseburger—no grill required!

Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 tablespoon yellow mustard
  • 2 tablespoons ketchup
  • Salt and pepper, to taste
  • Optional: garlic powder, Worcestershire sauce, chopped pickles
  • 1 cup shredded cheddar cheese (or cheddar-Monterey Jack blend)
  • ½ cup Bisquick or similar baking mix
  • 1 cup milk
  • 2 large eggs
  • Optional toppings: sliced tomatoes, pickles, extra shredded cheese, chopped parsley

Instructions

  1. Preheat oven to 400°F (200°C) and grease a pie dish.
  2. In a skillet over medium heat, brown ground beef. Add diced onion and cook until soft.
  3. Stir in mustard, ketchup, salt, pepper, and optional seasonings. Transfer the mixture to the prepared pie dish.
  4. Sprinkle shredded cheese evenly over the beef layer.
  5. In a bowl, whisk together Bisquick, milk, and eggs until smooth. Pour batter evenly over the beef and cheese.
  6. Bake for 25–30 minutes, or until golden brown and set. Let rest 5 minutes before slicing and serving.

Notes

  • To make homemade Bisquick: combine 1 cup flour, 1½ tsp baking powder, pinch of salt, and 1 tbsp butter or oil.
  • Add cooked bacon, jalapeños, or sautéed veggies for extra flavor.
  • Top with classic cheeseburger condiments like ketchup, mustard, or pickles.
