Ingredients

  • 1 bunch fresh asparagus (woody ends trimmed)
  • 12 tablespoons olive oil or avocado oil
  • 23 cloves garlic, minced
  • Salt and pepper, to taste
  • ½ cup shredded mozzarella cheese (freshly grated or pre-shredded)

Instructions

  1. Preheat oven to 415°F (210°C). Line a baking sheet with foil.
  2. Snap off and discard woody ends of the asparagus. Rinse and pat dry.
  3. Spread asparagus in a single layer on the prepared baking sheet.
  4. Drizzle with oil and sprinkle with minced garlic, salt, and pepper. Toss to coat evenly.
