Cheesy Stuffed Meatloaf Bites are a fun, bite-sized version of classic meatloaf with a gooey, melted cheese center. Perfect for appetizers, snacks, or main dishes, they’re easy to make, freezer-friendly, and totally kid-approved.

Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup ketchup
  • 1 tablespoon mustard
  • Cheese cubes or shredded cheese (cheddar or mozzarella)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a mini muffin tin or baking sheet.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, salt, pepper, and Worcestershire sauce. Mix just until combined.
  3. Scoop a small amount of meat mixture, flatten slightly, and place a piece of cheese in the center. Fold meat around the cheese to form a ball.
  4. Place meatloaf bites into the prepared pan.
  5. In a small bowl, mix ketchup and mustard, then spoon a little on top of each bite.
  6. Bake for 18–22 minutes until fully cooked and tops are caramelized.
  7. Let cool slightly before serving for best cheesy texture.
