Ingredients

  • 2 cups cooked chicken breast, shredded or chopped
  • 2 ripe avocados
  • 2 tbsp fresh lime juice
  • 1 garlic clove, minced (or 1/4 tsp garlic powder)
  • 1/4 cup red onion or green onion, finely chopped
  • 1/4 cup chopped fresh herbs (cilantro, parsley, mint, or a mix)
  • Salt and pepper to taste
  • 4 large flour or whole wheat tortillas
  • Optional: 1/4 cup Greek yogurt or sour cream
  • Optional: 1/2 cup baby spinach or mixed greens
  • Optional: 1/4 cup shredded cheese
  • Optional: Hot sauce to taste

Instructions

  1. In a large bowl, mash the avocados until mostly smooth.
  2. Add lime juice, garlic, salt, and pepper. Stir to combine.
  3. Mix in the chicken, fresh herbs, and onions until evenly combined.
  4. Warm the tortillas slightly to make them pliable.
  5. Spoon the chicken-avocado mixture onto the center of each tortilla.
  6. Top with any extras like spinach, cheese, yogurt, or hot sauce if using.
  7. Fold in the sides and roll tightly into burritos.
  8. Serve immediately or wrap in foil and chill for later. Optional: Toast in a skillet until golden and warmed through.
