A creamy, comforting chicken and rice casserole made in one dish with tender chicken, fluffy rice, and simple seasonings for an easy homemade meal.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup uncooked white rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 1/2 cups chicken broth
  • 3 tablespoons butter, melted
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a casserole dish.
  2. Spread the uncooked rice evenly across the bottom of the dish.
  3. Season the chicken breasts with salt, black pepper, paprika, and dried thyme.
  4. Place the seasoned chicken on top of the rice.
  5. In a bowl, mix together the cream of chicken soup, chicken broth, melted butter, chopped onion, and minced garlic.
  6. Pour the mixture evenly over the chicken and rice.
  7. Cover the dish tightly with foil.
  8. Bake for 50 minutes, or until the rice is tender and the chicken is fully cooked.
  9. Remove from the oven and let rest for 5 minutes.
  10. Garnish with fresh parsley before serving.
