The Chicken Avocado Melt Sandwich is a warm, cheesy, and satisfying meal featuring juicy chicken, creamy avocado, melted cheese, and crispy toasted bread. It’s quick to make, full of flavor, and perfect for lunch, dinner, or a hearty snack.

Ingredients

  • 1 cup cooked chicken breast (grilled, shredded, or rotisserie)
  • 1 ripe avocado, sliced
  • 4 slices provolone, mozzarella, or cheddar cheese
  • 4 slices bread (sourdough, ciabatta, or sandwich bread)
  • 2 tablespoons butter or olive oil (for toasting)
  • Salt and pepper to taste
  • Optional: tomato slices, red onion, lettuce, mustard, or mayo

Instructions

  1. Slice the avocado and season with a little salt and pepper.
  2. Butter the outside of each bread slice.
  3. Layer chicken, avocado slices, cheese, and any optional extras on the unbuttered side of one bread slice. Top with another slice of bread, buttered side out.
  4. Place the sandwich in a skillet or panini press over medium heat.
  5. Cook until the bread is golden and cheese is melted, flipping once if using a skillet.
  6. Remove from heat, let cool slightly, and slice in half before serving.
