A hearty, refreshing pasta salad that combines the best of Caesar salad and pasta dishes, made with grilled chicken, crisp romaine, parmesan cheese, and creamy Caesar dressing. Perfect for lunches, potlucks, or a light dinner.

Ingredients

  • 8 oz cooked pasta (rotini, penne, or bowtie)
  • 2 cups grilled or rotisserie chicken, chopped
  • 2 cups romaine lettuce, chopped
  • 1/2 cup Caesar dressing (store-bought or homemade)
  • 1/3 cup parmesan cheese, shredded or shaved
  • 1 cup croutons
  • Freshly ground black pepper, to taste
  • 1 tbsp lemon juice (optional)

Instructions

  1. Cook pasta according to package instructions. Drain and rinse under cold water to cool.
  2. Chop the grilled chicken and romaine lettuce while the pasta cools.
  3. In a large bowl, combine cooled pasta, chopped chicken, and lettuce.
  4. Drizzle in Caesar dressing and toss until well coated.
  5. Add shredded or shaved parmesan cheese and gently toss again.
  6. Top with croutons and freshly ground black pepper just before serving.
  7. Optional: Squeeze lemon juice over the salad for added brightness.
