This chicken fajita casserole combines the bold, zesty flavors of Tex-Mex fajitas into a cozy, oven-baked dish. Packed with seasoned shredded chicken, sautéed peppers and onions, salsa, and melty cheddar cheese, it’s the perfect easy dinner recipe for busy weeknights—hearty, family-friendly, and ready in under 45 minutes.

Ingredients

  • 3 cups shredded cooked chicken (rotisserie chicken works great)
  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow or white onion, sliced
  • 1 tbsp fajita seasoning
  • Salt and pepper, to taste
  • 1 cup salsa (jarred or homemade)
  • 1 1/2 cups shredded cheddar cheese
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Preheat oven to 375°F.
  2. In a skillet over medium-high heat, heat olive oil. Sauté sliced bell peppers and onions with fajita seasoning, salt, and pepper until softened (6–8 minutes). Remove from heat.
  3. In a greased 9×13-inch baking dish, layer shredded chicken on the bottom.
  4. Spoon salsa over chicken. Spread sautéed peppers and onions evenly over salsa.
  5. Top with shredded cheddar cheese.
  6. Bake for 20 minutes, until cheese is melted and bubbly.
  7. Garnish with chopped cilantro, if desired, and serve.
