Ingredients

  • 1 cup wild rice
  • 1 lb chicken breast, diced
  • 2 cups mushrooms, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic; sauté until soft and fragrant.
  2. Add diced chicken breast and cook until browned on all sides.
  3. Add sliced mushrooms and cook for about 5 minutes until they release moisture and develop flavor.
  4. Stir in wild rice, chicken broth, and thyme. Season with salt and pepper. Bring to a boil.
  5. Reduce heat to a simmer, cover, and cook for 40–45 minutes until rice is tender and soup has thickened.
  6. Stir in heavy cream and heat through for a few minutes. Serve hot.
