Chicken Patties – The Best Recipe

These easy chicken patties are tender, juicy, and packed with fresh herbs and veggies. Pan-fried or baked, they’re perfect for a healthy dinner, lunchboxes, or sandwiches—and ready in just 35 minutes.

Ingredients

  • 1 lb (500g) ground chicken
  • 1 small onion, finely chopped
  • Green onions, chopped (optional)
  • 5 cloves garlic, minced
  • 1 medium carrot (about 90g), grated
  • 1/2 bunch fresh parsley, chopped
  • 1/4 cup breadcrumbs
  • 1 medium potato (about 250g), grated and squeezed dry
  • 2 eggs
  • 1 ½ tsp salt
  • 1 tsp ground black pepper
  • Olive oil, for cooking

Instructions

  1. Make the Mixture: In a bowl, combine ground chicken, onion, garlic, green onions, grated carrot and potato, parsley, breadcrumbs, eggs, salt, and pepper. Mix until just combined.
  2. Shape: Form into small to medium-sized patties.
  3. To Pan-Fry: Heat 1 tbsp olive oil in a skillet over medium heat. Cook patties ~4 minutes per side until golden and cooked through.
  4. To Bake: Preheat oven to 400ºF (200ºC). Place patties on a parchment-lined tray, lightly spray with oil, and bake for 25–30 minutes, flipping halfway.

Notes

  • Squeeze grated potato well to avoid soggy patties.
  • Use turkey, beef, or plant-based ground meat for variations.
  • These freeze well, both cooked and uncooked.
