Ingredients

  • 1 lb ground beef or ground turkey
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • Salt and black pepper to taste
  • 1 (15 oz) can tomato sauce
  • 1 (14.5 oz) can diced tomatoes (with or without green chiles)
  • 1 (15 oz) can kidney beans or black beans (optional), drained and rinsed
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 (32 oz) bag frozen tater tots
  • Optional toppings: sour cream, chopped green onions, sliced jalapeños, hot sauce

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Add ground meat, onion, and garlic, and cook until browned. Drain excess fat.
  3. Stir in chili powder, cumin, salt, and pepper. Add tomato sauce, diced tomatoes, and beans if using. Simmer for 5–7 minutes.
  4. Spread chili mixture evenly in the prepared baking dish.
  5. Sprinkle shredded cheese over the chili layer.
  6. Arrange tater tots in a single layer on top of the cheese.
  7. Bake uncovered for 35–40 minutes, or until tater tots are golden and casserole is bubbly.
  8. Let cool slightly, then top with optional garnishes like sour cream or green onions.
