Ingredients

  • 1 can black beans, rinsed and drained
  • 1 can kidney beans or cannellini beans, rinsed and drained
  • 1 cup corn (fresh, canned, or thawed frozen)
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 3 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 1 tsp lime zest
  • 1 clove garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • Salt, to taste
  • Black pepper, to taste
  • Optional: 1 diced avocado, minced jalapeño, green onions, or a dash of hot sauce

Instructions

  1. In a large bowl, combine the black beans, kidney or cannellini beans, corn, bell pepper, red onion, cherry tomatoes, and cilantro.
  2. In a separate small bowl, whisk together olive oil, lime juice, lime zest, garlic, chili powder, cumin, salt, and pepper.
  3. Pour the dressing over the bean mixture and toss well to coat everything evenly.
  4. Cover and chill in the fridge for at least 15–30 minutes to let the flavors meld.
  5. Before serving, stir again and adjust seasoning if needed. Add diced avocado or other optional ingredients, if using.
