This cilantro-lime black bean rice is a flavorful and easy side dish made with jasmine rice, black beans, fresh lime juice, and cilantro. It’s light, healthy, and ready in 30 minutes—perfect for pairing with grilled meats, seafood, or as a satisfying vegetarian main.

Ingredients

  • 1 cup jasmine rice (or quick-cooking rice)
  • 2 cups chicken broth or vegetable broth
  • 1/2 tsp salt
  • 2 garlic cloves, minced
  • 12 tbsp fresh lime juice
  • 1 can (15 oz) black beans, rinsed and drained
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Cook rice: In a large skillet or saucepan, combine chicken broth, rice, salt, and garlic. Bring to a boil, then reduce to a low simmer.
  2. Simmer covered: Cover and cook for 15–20 minutes, or until rice is tender and liquid is absorbed.
  3. Add flavor and beans: Remove from heat and stir in 1 tablespoon lime juice, black beans, and cilantro.
  4. Adjust seasoning: Add more lime juice or salt to taste, if desired.
