Ingredients

  • For the Cilantro Lime Roasted Chicken:
  • 22.5 lbs bone-in, skin-on chicken thighs or pieces
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp lime juice + 1 tsp lime zest
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • For the Creamy Mashed Potatoes:
  • 2 lbs Russet or Yukon Gold potatoes, peeled and chopped
  • 4 tbsp butter
  • 1/2 cup milk or cream, warmed
  • Salt and pepper to taste
  • For the Pan Gravy:
  • Pan drippings from roasted chicken
  • 2 tbsp all-purpose flour
  • 1 1/4 cups chicken broth
  • Optional: 1 tbsp cream or a squeeze of lime juice
  • Salt and pepper to taste

Instructions

  1. Roast the Chicken: Preheat oven to 400°F (200°C). Mix olive oil, lime juice, zest, garlic, cilantro, cumin, paprika, salt, and pepper in a bowl. Rub over chicken and marinate 30 minutes (or overnight). Roast for 35–45 minutes until golden and internal temperature reaches 165°F (75°C). Transfer chicken to a plate and reserve drippings.
  2. Make the Mashed Potatoes: Boil potatoes in salted water for 15–20 minutes until fork-tender. Drain, then mash with butter and warm milk or cream. Season with salt and pepper to taste.
  3. Make the Pan Gravy: Place roasting pan on stove over medium heat. Whisk flour into pan drippings to form a roux. Slowly add chicken broth, whisking constantly. Simmer until thickened. Add cream or lime juice if desired. Season with salt and pepper.
  4. Serve: Plate mashed potatoes, top with roasted chicken, and drizzle with warm pan gravy. Garnish with fresh cilantro if desired.
