Soft, buttery cookies swirled with a sweet cinnamon-sugar filling and topped with a vanilla glaze—these cinnamon bun cookies are a delightful twist on the classic cinnamon roll.

Ingredients

  • For the cookie dough:
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • For the filling:
  • 1/3 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons unsalted butter, melted
  • For the glaze:
  • 3/4 cup powdered sugar
  • 12 tablespoons milk or cream
  • 1/4 teaspoon vanilla extract (optional)

Instructions

  1. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy. Beat in egg and vanilla extract.
  3. Gradually add the dry ingredients to the wet ingredients until a soft dough forms.
  4. Roll dough into a rectangle (about 1/4 inch thick) between two sheets of parchment paper. Chill for 15–20 minutes.
  5. Mix brown sugar and cinnamon. Brush chilled dough with melted butter and sprinkle evenly with the sugar mixture.
  6. Roll the dough into a tight log. Wrap and chill until firm, at least 30 minutes.
  7. Preheat oven to 350°F (175°C). Slice dough into 1/4 to 1/2 inch rounds and place on a lined baking sheet.
  8. Bake for 10–12 minutes until edges are lightly golden. Let cool completely.
  9. Whisk together powdered sugar, milk, and vanilla extract for the glaze. Drizzle over cooled cookies.

Notes

  • Chill dough before slicing to prevent spreading.
  • For added richness, use cream cheese in the glaze.
  • Add chopped nuts or a pinch of nutmeg for variation.
  • Store in an airtight container for up to 4 days or freeze for longer storage.
