Clafoutis is a classic French dessert made by baking fresh fruit, typically cherries, in a simple custard-like batter. It’s light, elegant, and easy to make—perfect for brunch or dessert.

Ingredients

  • 2 cups fresh cherries, pitted (or other fruit like berries, plums, or peaches)
  • 3 large eggs
  • 1 cup whole milk
  • 1/4 cup heavy cream (optional)
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter (for greasing dish)
  • Powdered sugar (for dusting, optional)

Instructions

  1. Preheat oven to 350°F (175°C) and generously butter a round or oval baking dish.
  2. Arrange pitted cherries (or chosen fruit) in a single layer in the greased dish.
  3. In a mixing bowl, whisk eggs with sugar until light and slightly frothy.
  4. Add milk, cream (if using), vanilla, and salt. Whisk until combined.
  5. Gradually add flour and whisk until the batter is smooth.
  6. Pour the batter over the fruit in the baking dish.
  7. Bake for 35–45 minutes, or until puffed, golden around the edges, and just set in the center.
  8. Let cool slightly. Dust with powdered sugar before serving, if desired.

Notes

  • Use thawed and drained frozen fruit if fresh isn’t available.
  • Try variations like almond extract or liqueur for added depth.
  • A cocoa version can be made by adding unsweetened cocoa powder to the batter.
  • Enjoy warm or chilled with whipped cream or yogurt.
  • Do not freeze—custard texture may change when thawed.
