Ingredients

  • 8 oz rice noodles or ramen noodles
  • 1 tbsp oil
  • 1 onion or 2 shallots, thinly sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red or yellow curry paste
  • 4 cups vegetable or chicken broth
  • 1 can (14 oz) full-fat coconut milk
  • 12 tbsp soy sauce or fish sauce
  • Juice of 1 lime
  • Fresh herbs: cilantro, Thai basil, or mint
  • Optional toppings: chili flakes, bean sprouts, green onions

Instructions

  1. Heat oil in a large pot over medium heat. Sauté onion, garlic, and ginger for about 3 minutes until soft and fragrant.
  2. Stir in the curry paste and cook for 1 minute.
  3. Add broth and coconut milk, stir, and bring to a simmer.
  4. Meanwhile, cook noodles according to package instructions, then rinse and set aside.
  5. Season the broth with soy sauce or fish sauce and adjust heat with chili flakes if desired.
  6. Add lime juice and adjust seasoning to taste.
  7. To serve, place noodles in bowls, pour hot broth over them, and garnish with herbs and optional toppings.
