Cowboy Butter Chicken Pasta is a bold and buttery comfort dish that combines juicy chicken, tender pasta, and a zesty cowboy butter sauce made with garlic, Dijon mustard, lemon, herbs, and spices. It’s fast, flavorful, and indulgently satisfying.

Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, sliced
  • 12 oz pasta (penne, fettuccine, or preferred type)
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 4 garlic cloves, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice + 1 tsp lemon zest
  • 1/2 tsp crushed red pepper flakes (adjust to taste)
  • 1/2 tsp paprika
  • 1 tbsp fresh parsley, finely chopped
  • 1/2 tsp dried thyme
  • Salt and black pepper, to taste
  • Optional: grated Parmesan cheese, for topping

Instructions

  1. Cook pasta in a large pot of salted water until al dente. Drain and set aside.
  2. Season chicken with salt, pepper, and paprika. Heat olive oil in a large skillet over medium-high heat and sear chicken until golden and cooked through. Remove and keep warm.
  3. In the same skillet, melt butter and sauté garlic until fragrant, about 1 minute.
  4. Add Dijon mustard, lemon juice and zest, red pepper flakes, thyme, and parsley. Stir and simmer for 1–2 minutes.
  5. Return chicken to the skillet and toss in the cowboy butter sauce to coat.
  6. Add cooked pasta to the skillet and toss until everything is well combined and heated through.
  7. Serve hot, topped with grated Parmesan if desired.
