Ingredients

  • 2 cups cooked chicken, shredded or chopped
  • 6 cups mixed salad greens (spinach, arugula, romaine)
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans, toasted
  • 1/2 cup crumbled feta or goat cheese
  • 1 small apple, chopped
  • Optional: sliced red onion
  • 1/3 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1 tbsp poppy seeds
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine salad greens, chicken, cranberries, pecans, apple, and cheese. Toss gently.
  2. In a separate bowl, whisk together mayonnaise, apple cider vinegar, honey, Dijon mustard, poppy seeds, salt, and pepper until smooth.
